I canned 6 quarts of pickles today. I’ve done it one other time in my life and, can I just tell you, they sucked. They sucked so bad that just thinking about them now makes my mind gag. I believe the recipe I followed back then had a list of ingredients and directions of “add to taste”. Let me tell you, add to taste is not clear enough. Apparently I have no taste or too much or something. Sucked really does not even begin to describe the magnitude of suckiness that they were. Anyhoo, this time I used a packet of seasoning for Kosher dill pickles by Mrs. Wages. I’ve tried her salsa mix and it was pretty good. Hubby loves him some Kosher dills that you buy in the refrigerated section at the store. He would eat the entire jar the night I bring them home, if I wouldn’t make him feel bad. I can’t for the life of me remember the brand, but it’s the only ones kept refrigerated. So this time tomorrow the pickles will be ready for sampling. One jar to sample and the rest can go downstairs to the food rack to be enjoyed – keep your fingers crossed! – at a later date.
